Got Ham?

Left over from Easter dinner?  We had a delicious ham dinner on Easter Sunday and have abundant leftovers.  One can only eat so many ham sandwiches, so I searched Pinterest for inspiration this afternoon.  I found a number of recipes, but only had all the ingredients for one.  Guess which one I chose?

Ham Pot Pie!

Sounds interesting, doesn't it?  It is just like a traditional chicken pot pie, only with ham.  The topping consists of biscuits instead of a pie crust, which my family prefers.  Haley made the biscuit dough and I made the filling.  We nocked it out in about a half hour, which isn't bad considering all of the dicing involved.

I wish that you could smell how deliciously yummy this was when it came out of the oven.



And this is all that was left about 20 minutes later.


Everyone ate it!  Even the ultra picky three year old. Okay, so she only ate the biscuit, but she sat at the table and chewed food with the rest of the family.  That counts, right?

I think that I may just chop up the remaining ham and toss it in the freezer so that I can make this again next week!

When A Pinterest Project Goes Bad

Sunday evenings are our Family Formation night.  We have dinner followed by our family lesson.  And to encourage (ahem...read that as bribe!) the children to be attentive to the week's lesson, we have a special treat after our week is complete.  I have seen this in a variety of places and thought it would be a fun dessert.

 



Don't those look absolutely delicious???  Well, those are NOT my photos.  I wish I would have found this blog before I tried to just "make them quick"....when will I learn?! This is how mine turned out.

Ummm...that's not what was suppose to happen!  I'm glad I put the cookie sheet underneath the muffin tin or I would have had a gooey mess on the bottom of my oven!

This is the closest thing to a "bowl" I was able to salvage!

So, we decided to have Chocolate Chip Cookie Crumble Sundaes.  Hey, the glass is always half full at the Kraft house!

The children were really good sports about this.  Haley said, "Mom, those bowls would have been cool, but I think it would have been really messy to eat.  This is much better!" Man, I love that kid!

Waste Not, Want Not - Mini Wheat Muffins

A few of my children enjoy eating mini wheats for breakfast.  I purchase the family size Malt-o-Meal brand and we go through at least a bag a week.  It's high in fiber and relatively nutritious, so I'm okay with it as a breakfast choice.  However, I cannot stand all of that powdery leftover stuff at the bottom of the bag which just gets thrown into the trash.  Each time I'd toss all that uneatable cereal into the garbage, it would bother me.  What a waste of both food and money!  That got me to thinking...there must be something I could make with that stuff.  I searched the internet and found a few recipes that turned it into muffins.  Hmmm...that sounded like it just might work! Here's my recipe that I adapted from a few I found.

Mini-Wheat Muffins
1 tbsp baking powder
2 cups flour
1 cup crushed mini wheats (the stuff left over at the bottom of the bag/box)
3/4 cup sugar
1 tsp cinnamon

3/4 cup milk
1 cup oil (or 1/2 cup applesauce plus 1/2 cup vanilla yogurt)
2 eggs

Combine the dry ingredients in one bowl.  Mix the wet ingredients well in another bowl. Pour them into one bowl and stir together.  Let sit for 10 minutes (this allows the mini wheats soften up a bit and be less crunchy in the final product).

Place liners in mini muffin pan and fill with batter.  Bake at 350 degrees for 10-12 minutes.

I have made these a couple of times and the children devour them.  I think they are pretty tasty as well.  I've added some mini chocolate chips which is a huge hit with the kids. I like them better when using the applesauce/yogurt combination in replacement of the oil which is only possible if my 3 year old hasn't eaten all of the applesauce in the house!
